Chicken Spinach Meatballs

Ingredients:
1 pound ground chicken breast (can use turkey too!)
1 cup raw spinach- chopped
1/4 cup ground flaxseed
2 egg whites or 1 whole
1/2 teaspoon lemon juice

Spices added: Garlic Powder, Basil, Oregano, Pepper and Sea Salt

Directions:

1. Mix all the spices together with the ground chicken
2. Add spinach and mix, then add ground flaxseed
3. Add eggs and mix all together
4. Place 1oz or ping pong ball sized meatballs onto greased baking sheet
5. Bake at 400* for 25 minutes

Serving Size: 20 meatballs
Calories per meatball: 43

Modifications:

1. You can always brown the meatballs in a pan before baking to add additional flavor.
2. Add additional veggies
