Chocolate Sweet Potato Brownies

I love sweets, anything with chocolate, frozen yogurt, chocolate graham crackers, chocolate chips.. but I have been trying to cut that one thing out of my diet or limit it! The SUGAR! lol

I am always up for experimenting with healthier options for my sweet tooth that does not involve protein powder. I found this recipe from PaleOMG. As always, I modified and made some changes.

Here is what I came up with and OMG- its been the perfect addition to my baking recipes and chocolate fix. I topped it with a greek yogurt icing (no pictures, oops!) Hope you enjoy it as much as I do!!

Sweet Potato Brownies

Ingredients:
8 oz sweet potato
6 egg whites
2 tablespoons coconut oil
2 tablespoon honey
3 tablespoon coconut flour
2 tablespoon unsweetened cocoa powder
1/4 teaspoon baking powder
1/2 teaspoon cinnamon
1/3 cup mini chocolate chips
Dash of salt

Directions:
1. Pre-heat oven to 350*
2.Cook sweet potato, then mash.
3. Add coconut flour and mix well
4. Add in all wet ingredients (melt coconut oil first)
5. Mix well, then add the mini chocolate chips
5. Bake 25-35 minutes (depending on your oven, place a fork in at 25 minutes to see if fully cooked)

Serving Size: 8 slices

Greek yogurt icing:
2 tablespoons greek yogurt, mixed with some stevia and cinnamon (none pictured)

I used a round baking pan instead of an 8×8 brownie pan.
