Breakfast Cookie

My little Prader-Willi (PWS) daughter of mine is a little picky right now when it comes to food. I was in the kitchen and had some old bananas. My mornings are rushed like many of you and wanted to made a grab-n-go breakfast for her to eat in the car.

After some experimentation I came up with this amazing (if I say so myself) Breakfast cookie!

1/2 cup ground oats
2 small bananas or 1 large (the browner the better)
1/4 cup vanilla yogurt (Kroger, Low-carb vanilla was used, but any vanilla or plain will work)
2 egg whites
1/2 teaspoon cinnamon
2 tablespoons of natural peanut butter (can use any nut butter or omit for nut allergies)

Mash bananas, then add yogurt, egg whites, cinnamon and peanut butter. Mix well, then add ground oats. Using a tablespoon, scoop out onto a baking sheet.

Bake at 350* for 8-10 minutes.

Serving Size: 16 cookies for little hands, 12 cookies for larger hands

Calories for 16: 38 each
Calories for 12: 50 each
