Honey Roasted Cocoa Almonds

I love almonds! They are a great source of healthy fat, but in moderation. Typically 1/4 cup contains about 160 calories. That is not very much when you are hungry. I tend to mash mine up into smaller pieces because it feels like I am eating more than I really am.

I was bulk cooking and we were low on almonds so I wanted to make some more. I had these in the pantry and wanted to try a sliced almond version instead of using whole almonds. Plus this is a different way to cook them.

Honey Roasted Cocoa Almonds

1 bag of sliced almonds
2 tablespoons pure honey
2 tablespoons unsweetened cocoa
1-2 teaspoon of cinnamon (you can omit this, but I love cinnamon)
2-4 tablespoons of water

Place the entire the bag of almonds into a pan and roast. Make sure you DO NOT BURN THEM, otherwise you will taste it. Combine the honey, unsweetened cocoa and cinnamon in a bowl. Then pour the roasted almonds into the mixture and stir, fully coating the almonds.

Place onto parchment paper or a paper towel to let cool. Once cooled, place into an air tight container!
