Double Chocolate Oat Cookie

Many of you know I have a love of sweets. I think if I had to choose something to eat everyday for the rest of my life it would be something sweet. Especially after dinner! Yummy! But since I have limited the amount of sugar I eat, I try to come up with some alternative to satisfy my sweet tooth!

Double Chocolate Oat Cookie


1/4 cup coconut flour
1/2 cup old-fashioned oats
1/4 cup unsweetened applesauce
3 egg whites
2 tbsp greek yogurt
1 tablespoon honey
1 tablespoon unsweetened cocoa
1/4 teaspoon vanilla extract
1/4 teaspoon baking powder
2 tablespoon mini chocolate chips

Double Chocolate Oat Cookie


Combine all dry ingredients, then add wet and stir until mixed. Then add in chocolate chips. Using a tablespoon, place a heaping amount onto a baking sheet. Bake at 350* for 12-14 minutes.

1. For a sweeter cookie: add 2-4 packets of natural sweetener
2. Using only coconut flour: increase egg whites to 5
3. To eliminate sugar: remove the chocolate chips
4. More protein: add some chocolate protein powder
