Paleo “Granola Style” Crunch

Lately I have been looking at all the so called “diet” plans out there. I prefer to think of my habits as healthy eating and I AM NOT ON A DIET. The way I eat is a chosen lifestyle. I choose whole grains, fruit, vegetables. I eat nuts and wheat and cheese and chocolate. I am choosing to eliminate processed foods, sugars and fried foods…. I want to experience all the trends of the diet world and today is a Paleo Granola inspired by Pam’s Paleo Crunch.

This is different than your typical store bought granolas you see in the grocery store. My taste testers all loved it and its a great way to get some healthy fats into your diet.

Ingredients: (this is half the recipe and was a good amount)
Dry Ingredients:
1/2 cup raw pumpkin seeds
1/2 cup raw sunflower seeds
1/2 cup reduced sugar craisins (or any kind of dried fruit you like)
1/4 cup ground flax seeds
3/4 cup almond meal (ground almonds)
1/2 teaspoon cinnamon
1/2 teaspoon sea salt
1/4 teaspoon baking soda

Wet ingredients:
1/2 cup coconut oil
1/4 cup honey
1.5 teaspoon vanilla extract

Directions:
~Pre-heat oven to 250*
~Mix all dry ingredients
~Melt coconut oil, then add honey and vanilla
~Combine the wet with the dry ingredients
~Spread onto baking sheet, covering all of it
~Bake for 1 hour, stir around, then bake an additional 15-20 minutes
~Once out of the oven, place onto paper towels to remove excess oil
~Let cool and store in an air tight container

Play around with everything, and let me know what you come up with. I can’t wait to put this on top of my vanilla Greek yogurt!
