Cauliflower Cheese Bake (Recipe Remake)

This is where I take a recipe someone has given me or have found, and I remake it. Whether it be less calories, less fat, a different way to cook it or totally remade- this is a recipe remake!

The original recipe is from Smitten Kitchen and can be found here.

This is my version~

Ingredients:

1 small head of cauliflower
3 egg whites
1 clove of garlic, minced
1/2 cup fat free cheddar cheese
1/4 cup ground oats (old fashioned)
1/4 teaspoon red pepper flakes
1/2 teaspoon baking powder
Sea Salt and Pepper to taste

Directions:
~Steam the cauliflower for 5-6 minutes or until soft
~Drain and towel dry off any extra water

~Place into glass brownie pan and mash cauliflower, leaving some bigger chunks
~In a small bowl mix all ingredients
~Pour into pan, then mix with spatula

~Bake at 400* for 30 minutes
~Broil for an additional 5 minutes if you like that browned look

CALORIES per 4 slices: 79 calories

The Topping: Sun-Dried Tomato Spread

~2 tablespoons sun dried tomatoes (not in oil)
~3oz of plain greek yogurt (non-fat)
~Sea Salt and pepper
~Mix in a food processor (1 minute +)

CALORIES: (all of spread) aprox: 100
