Quinoa Kale and Spinach cups

Quinoa, Kale and Spinach Cups

Ingredients:

1 cup cooked quinoa
2 whole eggs
6 egg whites
1/2 cup fat free cheddar cheese
1 piece of fresh garlic, minced
1/4 cup greek yogurt
Handful of Kale
Handful of Spinach

Directions:

-Preheat oven to 350*
-Cook quinoa per directions on package
-While cooking, saute garlic, kale and spinach in a pan
-Add quinoa, eggs, cheese, yogurt and cooked kale/spinach mixture and stir up
-Add pepper, sea salt and garlic pepper
-Scoop out and put into muffin tin
-Bake 25-30 min.

Nutritional Information:
Calories per cup (aprox): 55 calories per cup

These turned out really good. Really good! They are a great side dish or a grab-n-go breakfast, just beware of the garlic!! 🙂
