Coconut Chocolate Chip Cookies

I have a serious sweet tooth but am trying to make “healthier” choices. Yes, I still have my Fro Yo every so often, but when my real craving for CHOCOLATE sets in, I wanted to find a go-to alternative that would satisfy it.

I have been experimenting with coconut flour a lot lately. There is so much talk about Paleo and Gluten Free things these days that I had to hop on the ban wagon and start experimenting. Here is a link that describes: Cooking with Coconut Flour.

In my quest to make something with chocolate, these came about:

Coconut Chocolate Chip Cookies (Gluten Free)


1 cup coconut flour
2 whole eggs
4 egg whites
1/2 cup sugar free maple syrup
1/4 cup unsweetened applesauce
1 tablespoon coconut oil
1/2 teaspoon vanilla extract
1/8 teaspoon sea salt
1/2 cup chocolate chips

~Pre-heat oven to 350*
~Combine eggs and whisk until blended
~Mix together all wet ingredients
~Add coconut flour slowly and stir together
~Add in chocolate chips and mix

~Using a tablespoon, scoop out a heaping scoop and place onto baking sheet
~These cookies will not spread out so however you place them onto the baking sheet is how they will come out. I will recommend flattening a bit.
~Place in oven and bake for 20 minutes
(**If you are in a hurry, bump the temp up to 375* for 12-15 minutes**)

~Once cool, place in air tight container and store in the refrigerator

**One taste tester said these could use a glass of milk, I like mine cold right out of the fridge!!!
