Gluten-Free Honey Almond Cornbread

I have a horrible sinus infection and have been feeling run down lately. I felt like some comfort food today and some soup and cornbread seemed to sound good! So I began to search the internet and came across a recipe from here. This is actually a Gluten-Free Paleo cornbread…. So if you are a Paleo fan- here ya go!

If you are new to the almond flour world, it will take some getting used to, or for me it has. The texture is a little rough, more grainy, rather than smooth. (Hope that makes sense). It is also more dense than a typical cornbread.

For my purpose I wanted to lower the calories a bit and instead of using butter, I swapped it out for unsweetened applesauce, added egg whites and changed a few other ingredients. This is what I came up with and I loved it. You could really taste the honey and the almonds will fill you up with some added protein!

GF almond cornbread


1 cup almond flour or ground up almonds
1/4 cup unsweetened applesauce
3 tablespoons honey
1 tablespoon coconut oil
1 whole egg
3 egg whites
1/2 teaspoon vanilla extract
1 teaspoon baking powder
1/4 teaspoon sea salt


-Combine all the wet ingredients together
-Melt coconut oil and combine with the wet ingredients
-Stir in almond flour and mix
-Place in an 8×8 pan. Use non-stick spray or parchment paper
-Bake at 325* for 25 minutes

Total Calories: (per 12 squares)
(may range from 1,228-1,328, depending on the almond flour and the brands used)
Calories per piece: (aprox) 102-112
